
So today, unlike most Americans, I had to work. In light of this dreary news, I decided to light up my lunchtime with a little touch of Mama Mica! (My very own creative name for the motherly side of moi, which jumps out every now and then)
The result: "3 Bean's Wrap". Ready in 2 min or less.. with less than 5 min prep time!!
What you need to prep:
About 1/4 organic onion - minced/chopped if your lazy like me.. or LOVE onions..add more
1/4 chopped organic red pepper
half handful freshly chopped cilantro
3 cans of different 0organic beans, rinse and drain (1 can each type of bean, mix & match colors for aesthetic pleasure and variation in tastes)
Pack the bean salad in an air tight container and shake shake shake doing a silly dance! Voila! There you have your 3 bean salad and the prep work is done!
To pack on the side:
2 tbsp. Hummus (I prefer the naturally Delicious Cedar's Garlic Lovers Hummus)
Whole Wheat Wrap (I used sun-dried tomato basil)
Don't forget to place the beans & hummus in your office refrigerator until the highly anticipated LUNCH BREAK!
When ready to chow:
Roll out your whole wheat wrap, place two whopping tablespoons of hummus.
Plop as much of that bean salad as you can fit onto the middle of the wrap.
Take a pic of the creation to share with me (I will be so proud of you!)
& wrap that sucker up before stuffing your face!
THAT'S IT!
So easy, so high in fiber, so low in fat.. and just plain pretty!
