Experiments In The Kitchen with Mama Mica 

"Miami Green Eggs & Ham"

Today I wanted to prep a fast and easy breakfast for my little one. After he goes off to school,  I will be flying out of town for a whole week. To make this as quick, easy & memorable as possible, I created my own Miami version of the notorious 'Green Eggs & Ham'. It is only slightly spicy, but with an undeniably tropical Latino twist, you'll feel the Miami heat I'm talking about. Yes, my little guy actually "likes spicy" too!

  • 1 avocado 
  • 1 onion
  • 5 eggs
  • 1/4 cup whole milk
  • 2 tbsp butter
  • rock salt
  • jalepeño cheddar cheese
  • bacon strips
  • your favorite hot sauce
  1. Dice the onion & combine in a bowl with chopped avocado, a dash of lime juice and a pinch of salt. Smush and smudge all of these aromatic ingredients, releasing the flavors of the onion and allowing the avocado to absorb the lime juice and salt. Set aside.
  2. Place the bacon on a skillet over medium heat and sizzle for about 10 min. Turning over once, half way through.
  3. Combine 5 raw eggs and the milk. Now whisk. Pour onto a  medium-high heated skillet (with the butter already melted and ready).
  4. Scramble to a perfect fluff, reduce heat to medium-low, and lay the jalepeño cheddar cheese on top. Let it melt.
  5. Now add your tropical avocado smush & scramble the egg mixture again.
  6. Served with the side of crispy bacon and topped with your favorite hot sauce, your hungry eyes will feast on what is truly a rare and unique version of " Miami Green Eggs & Ham".
